It’s officially spooky season, and if you’re anything like me, that means it’s time to eat all the pumpkin and apple treats you can get your hands on. I’ve picked one pumpkin recipe and one apple recipe that are easy, delicious, and perfect for cozying up at home — or just pretending you’re a witch in your kitchen.

Pumpkin Spice Muffins: Because Everything Is Better With Cinnamon

Ingredients:

 

  • 3/4 cup all-purpose flour (unbleached if you prefer)

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • Pinch of ground cloves (optional)

  • Pinch of salt

  • 1/4 cup brown sugar (packed)

  • 2 tbsp white sugar

  • 1/4 cup pumpkin puree

  • 1 large egg (beat and use half, about 2 tbsp)

  • 2 tbsp vegetable oil (or melted butter)

  • 1 tbsp milk (any kind)

  • 1/2 tsp vanilla extract

 

Instructions:

  1. Preheat oven to 350°F (175°C). Line 6 muffin cups.

  2. In one bowl: whisk flour, baking powder, baking soda, spices, and salt.

  3. In another: whisk sugars, pumpkin, egg (half), oil, milk, and vanilla.

  4. Combine wet and dry — stir gently until just mixed.

  5. Divide into 6 cups and bake 18–22 minutes, until a toothpick comes out clean.

 


Caramel Apple Slices: Sweet, Sticky, and Slightly Dangerous

Ingredients:

  • 2–3 apples, sliced

  • ½ cup caramel sauce

  • Optional toppings: chopped nuts, chocolate drizzle, sprinkles

 

Instructions (zero stress edition):

  1. Slice your apples and lay them flat on parchment paper.

  2. Warm up the caramel slightly and drizzle (or dunk, if you’re feeling fancy) over the apples.

  3. Add toppings if you want — make them as extra as your October mood.

  4. Let cool 10–15 minutes, then devour immediately.
