Mock Tail Summer

Published on 26 May 2025 at 21:33

As I got older, I realized one night out now means a couple of days to bounce back. My body just can't handle getting totally wasted like it used to. So, since I still love making fun drinks and having a good time, I thought it'd be cool to check out some mocktail recipes to try this summer.

Cucumber Lime & Mint Mocktail

The first recipe I stumbled upon that sounded really good was this Cucumber Lime & Mint Mocktail. This recipe is from Cucumber Lime Mint Mocktail - Colorful Superfoodie

Ingredients

  • 2 large cucumbers
  • Juice of 2-3 limes
  • 1/2 cup mint leaves
  • 4 cups filtered water
  • Ice

What to do

  1. Chop your cucumbers into small pieces and place inside a blender with the lime juice, water and mint leaves.
  2. Blend for a minimum of 2 minutes
  3. Strain contents and pour into a pitcher with ice

Garnish

  • Cucumber ribbons *
  • Mint**

*You can take a cucumber and use a wide peeler to create ribbons to place inside a glass before you put ice.

**Slap the mint in your hand to release the flavor

Elderflower Mojito Mocktail

I found this refreshing mocktail on The Mindful Mocktail, and it sounds like the perfect light and fizzy summer drink. It’s a twist on a classic mojito, with a floral kick from elderflower.

Ingredients

  • Fresh lime

  • Fresh mint leaves

  • Elderflower cordial or syrup

  • Soda water or kombucha (your choice!)

  • Ice

What to do

  1.  Muddle the lime in your glass until the juice is released.
  2.  Add the mint and gently press down on it with your muddler a couple of times
  3. Fill your glass with ice
  4. Add the elderflower syrup/cordial
  5. Top with soda water and stir gently.
  6.  Garnish and serve

Garnish

  • Lime Wedge
  • Mint

Summer Cup Mocktail

Garnish

  • Frozen berries
  • Chopped fruits
  • Cucumber slice
  • Mint
  • Citrus

I found this fruity and refreshing Summer Cup Mocktail on BBC Good Food, and it screams picnic weather and garden parties. It's made with cucumber, mint, frozen berries, and sparkling lemonade—so it’s basically summer in a glass.

Ingredients

  • 1 cm thick slice of cucumber

  • 1 sprig fresh mint

  • A few frozen red berries (e.g., raspberries, strawberries)

  • 120 ml clear, sparkling lemonade

  • Ice

  • Optional garnishes: more frozen berries, chopped fruits, cucumber slices, mint leaves, citrus slices

What to do

  1. Chop the cucumber slice and mint sprig into small pieces.
  2. Boil 200 ml of water in a small pan.
  3. Add cucumber and mint to the boiling water, turn off the heat, and steep for 2 minutes.
  4. Add frozen red berries, let defrost for a minute, then gently crush with the back of a spoon.
  5. Strain the mixture to remove solids. Store in the fridge for up to 24 hours; makes four drinks.
  6. To serve, pour 40 ml into a tall glass with ice, add 120 ml sparkling lemonade, garnish with fruits, cucumber, mint, or citrus. Stir and enjoy!
